Rebel Chef Recipe: Triple Chocolate Brownies

Fear not. The long dark winter nights are getting lighter by the day. From the 11th January we were gaining 2 minutes a day. From the 26th we’ll be gaining 3!

To warm up your day in the mean time, why not try this really easy but amazingly tasty brownie recipe. I made some at work this week. They were brilliant.






Triple Chocolate Brownies









275g/10 oz plain chocolate
275g/10 oz unsalted butter
85g/3 oz pecans or walnuts broken into pieces
85g/3 oz milk chocolate cut into large pieces
85g/3 oz white chocolate cut into large pieces
175g/ 6oz plain flour
1 tsp baking powder
4 large eggs lightly beaten
1 tsp vanilla essence
325g/12 oz caster sugar


  1. Preheat the oven to 170C/325F/Gasmark3. Butter a large tin.
  2. Put the plain chocolate and butter in a bowl. Place over simmering water and allow to melt.
  3. sieve the flour and baking powder into a bowl and set aside. Remove the melted chocolate from the heat and stir in the sugar. Add the eggs and vanilla essence. Fold in the flour, nuts and chocolate.
  4. Pour the chocolate mixture into the cake tin. Place in the oven and bake for 20-25 mins. The top should be firm but the inside will feel soft when cooked. Allow to cool in the tin. Remove the brownies from the tin and cut into squares.
